St Patrick’s Colcannon
If you are a fan of potato and corned beef you will love this St Patrick’s Day Dinner. It can even be served as a vegetarian dish if you leave out the corned beef.
To make it, chop 3 pounds of sliced potatoes and boil for 20 minutes. Then core and shred a head of cabbage and boil with a little butter. Fry garlic and a sliced onion or leek till soft. Mash the potatoes with pepper and melted butter and mix in the cabbage, a pound of warmed and chopped corn beef and 1 and a quarter cups of hot milk. Then it’s all ready to go.
Irish Shepherd’s Pie
This is a variation on the usual lamb shepherd’s pie for St Patrick’s day menu. This one has a twist and uses turkey which is much lighter and less fatty. To make it, boil 1 and a half pounds potatoes for around 20 minutes. Mash this with however much butter you like and a cup of milk. Season to taste. While the potatoes are boiling, fry a pound of ground turkey and a chopped onion. When these are a golden brown add in 2 1 ounce packs of chicken gravy mix and a cup of water. Layer the turkey mixture on the bottom of a casserole dish, put 16 ounces of frozen peas and carrots on top, then the mashed potato and finally some grated cheese. And there you have it, a perfect St. Patrick’s Day dinner.

So what makes a pound cake Irish? Well in this case it’s the addition of a tot of Irish Whiskey. To make this delicious St Patrick’s Day dessert beat 1 cup of butter with 8 ounces of cream cheese. Add in 6 eggs, one at a time and then beat in 2 cups of sugar. Stir in 2 cups of self-rising flour, vanilla extract and mace. Add some Irish whiskey. However much you put in is as to your taste. If you want a boozy cake add a little more. The cake needs to be baked for an hour at 350F.
Bittersweet Chocolate and Stout Beer Ice Cream
Are you looking for an indulgent adult’s St Patrick’s Day dessert? If so you won’t go far wrong with this ice cream. Heat up a pint of thick cream and remove from the stove. Stir in 11 ounces of dark chocolate and ¾ cup of sugar and allow the chocolate to melt. After this add the stout beer; 1 pint should be enough. Refrigerate until it has cooled and then use an ice cream maker to turn it into ice cream. Leave to freeze overnight.
